Polyphenols are health heroes hiding in your plants—but finding them requires expensive, high-tech tools. Now, a simple method promises to change that.

Polyphenols—the antioxidants behind many of the health benefits of fruits, vegetables, and herbs—are notoriously tricky to analyze. They exist in complex plant matrices, making extraction and identification a challenge. Most precise methods rely on tandem mass spectrometry, but such high-resolution equipment is rare and costly. This leaves many labs without access to reliable polyphenol analysis.
