Active edible coatings and films enriched with Salvia officinalis supercritical extract: characterization and application on Telemea cheese
Imagine a cheese wrapper that fights bacteria while you sleep—this is the promise of a new edible coating made from sage extract and natural polymers.
Scientists have turned to an ancient herb, sage (Salvia officinalis), to create a smart, edible shield for cheese. Using supercritical fluid extraction—a green technique that avoids harsh solvents—they obtained a potent extract rich in fatty acids, carotenoids, and phenolic compounds. This extract was then blended into a chitosan-gelatin-glycerol matrix to form coatings and films designed to keep dairy products safe.
The films were more than just a barrier. Bioinformatic analysis predicted that 75.44% of the compounds would be highly absorbed in the gut, and 78.95% showed favorable toxicity profiles, suggesting safety for food use. Adding the extract didn't change the film's thickness, density, or solubility, but it did alter its microscopic structure, water vapor permeability, color, and UV-blocking ability—all tunable by extract concentration.
The real test came against Listeria monocytogenes, a notorious foodborne pathogen. In lab tests, the enriched films showed enhanced antilisterial activity, stable even at refrigeration and room temperatures. When applied to Telemea cheese, the coatings suppressed mesophilic bacteria, yeasts, and psychrophilic microbes, and cut Listeria populations by 1.05–1.29 log CFU/g over 21 days.
This eco-friendly approach not only extends cheese shelf life but also reduces reliance on plastic packaging—a win for both food safety and the planet.
