Researchers tested pulsed electric fields (PEF) on sage leaves, using only ethanol, water, or a mix as green solvents. The goal? To pull out more polyphenols and volatile compounds while boosting oxidation resistance.

They varied pulse duration (10 or 100 microseconds) for 30 minutes and compared results against non-PEF extracts. The sweet spot emerged with a 25% ethanol solution and 100-microsecond pulses: total polyphenols jumped by up to 73.2%, and rosmarinic acid extractability soared by 403.1%. That's not just a tweak—it's a game-changer.

PEF didn't stop at polyphenols. It also reshaped the final concentration and composition of volatile compounds, meaning the extract's aroma and flavor profile could be tuned. This isn't just about sage; it's a blueprint for greener, smarter extraction across the plant kingdom.
