Forget the pods—carob leaves are the new underdog in the wellness world. Packed with bioactive gems like siliquapyranone and myricitrin, these leaves have shown impressive antioxidant and blood sugar-lowering potential. But extracting them sustainably was the challenge. Enter two green techniques: pressurized hot water extraction (PHWE) and probe-based ultrasound-assisted extraction (probe-UAE). Using smart experimental design, researchers optimized these methods to get the most out of the leaves while keeping the compounds stable and intact. The results? PHWE, at 98°C with three 5-minute cycles, and probe-UAE, with 52% ethanol for 20 minutes, delivered exhaustive recovery without creating unwanted byproducts. Both methods preserved the leaves' antioxidant and enzyme-inhibiting powers. Compared to conventional techniques, these green approaches slashed extraction time, solvent use, and environmental impact—while boosting yield and quality. PHWE even produced fully aqueous extracts ready for direct use, while probe-UAE shone with energy efficiency and simplicity. This isn't just about carob leaves; it's a blueprint for turning overlooked plant waste into high-value, health-promoting ingredients for the food and nutraceutical industries.
