A systematic review, following the PRISMA 2020 guidelines, has delved into the green extraction of bioactive compounds from fruit matrices. Researchers scoured databases like Scopus and Web of Science, analyzing studies from 2015 to 2025, and after rigorous evaluation, 63 relevant studies were selected. The findings highlight a growing interest in natural deep eutectic solvents (NADES), which are sustainable, low-toxicity, and highly efficient. When paired with technologies like ultrasound and microwaves, these solvents boost yields, cut energy use, and protect delicate compounds such as polyphenols, flavonoids, and anthocyanins. The performance of NADES depends on their properties—polarity and viscosity—and operational factors like temperature and water content. This synergy offers a promising path for agri-food valorization, creating functional ingredients and clean-label systems. Moreover, it paves the way for sustainable industrial-scale extraction processes.
