Bioactive Compounds Extracted from Saudi Dates Using Green Methods and Utilization of These Extracts in Functional Yogurt

What if your yogurt could be a treasure trove of health-boosting compounds, hidden in plain sight? Scientists have unlocked the bioactive potential of Saudi dates using green extraction methods, and the results are deliciously promising.

Four varieties of Saudi dates—Ambara, Majdool, Sagai, and Sukkari—were put under the microscope, their flesh extracted via supercritical fluid, subcritical CO2, and traditional Soxhlet methods. The green techniques (SFE and SCE) unearthed a richer chemical landscape: 19 bioactive compounds, compared to fewer than 12 from Soxhlet extraction. Both the date type and extraction method shaped the phenolic profile, with statistical significance (p ≤ 0.05).

These extracts then took a starring role in yogurt. Adding them boosted total phenolic content, DPPH antiradical activity, viscosity, and redness (a*), while lowering lightness (L*) and yellowness (b*)—all significant changes. Over time, storage at 4°C brought predictable shifts: pH, phenolic content, antiradical activity, and bacterial counts gradually declined, while acidity, syneresis, and viscosity increased, with a few exceptions.

Crucially, the yogurt’s sensory appeal remained largely intact. The authors conclude that date flesh extracts can enhance the health quality of yogurt without major sensory drawbacks—a win-win for food scientists and consumers alike.
