Minced meat is a kitchen staple, but its large surface area and handling make it a playground for bacteria like Listeria and E. coli. Chemical preservatives work, but consumers demand clean labels. Enter agro-waste: prickly pear peel, melon peel, and melon seeds, extracted using green methods that outperform conventional solvents in both recovery and eco-friendliness.
In minced beef, melon peel extract stole the show. It cut spoilage indicators—pH, peroxide value, and volatile basic nitrogen—and slashed bacterial counts dramatically. Compared to controls, staphylococci dropped by 72%, Pseudomonas by 68%, and Enterobacteriaceae by 51% by day 6. Even more striking, it completely wiped out Listeria monocytogenes within the same period.
But taste matters too. Sensory tests ranked prickly pear peel highest, followed by the peel+seed combo, then melon peel alone—all beating the spoiled control. Melon peel also packed a phenolic punch (98.79 mg GAE/g) and revealed 38 metabolites, mostly flavone-C-glycosides and fatty acids, via LC-qTOF-MS/MS.
This isn't just about better burgers. It's a step toward circular economy, turning waste into preservatives. The authors call for techno-economic analysis to scale up—because the next big food innovation might come from your compost bin.
