In the quest for natural food additives, scientists have turned to an unlikely hero: the taioba leaf. This tropical green, often overlooked, was cooked and freeze-dried into a powder, then put under the microscope—literally. The results? A powerhouse of bioactive compounds that could soon grace your food in a whole new way.
The team quantified the leaf's key players: flavonoids at 17.15 mg per 100 g, ascorbic acid (vitamin C) at 58.3 mg per 100 g, and total polyphenols at 24.15 mg gallic acid equivalents per 100 g. But the standout was the total antioxidant activity, measured by the ABTS assay, which clocked in at an impressive 37.35 µg Trolox equivalents per gram.
Using infrared spectroscopy, they spotted telltale bands for hydroxyl groups, pointing to cellulose, hemicellulose, and lignin—the structural fibers that give the leaves their toughness. Scanning electron microscopy revealed a fibrous, irregular surface, confirming the leaf's robust architecture.
