The potato-processing industry generates massive mountains of underutilised potato peels. Far from being useless trash, this by-product is a treasure chest of valuable bioactive molecules. Inside these discarded peels lie glycoalkaloids and polyphenols, serving as crucial precursors for steroid hormones and natural antioxidants. Beyond these specialized compounds, industrial potato-peel waste overflows with primary metabolites. These include starch, non-starch polysaccharides, proteins, lipids, lignin, and cellulose. All of these abundant carbohydrates hold great potential to undergo fermentation, producing ethanol, lactic acid, and acetic acid. Meanwhile, the bulk of the peel consists of alcohol-insoluble matter, boasting a dietary fibre content of approximately 40 percent. A recent scientific review now highlights the latest advances and emerging technologies designed to extract these treasures and valorise potato-peel waste effectively within the food industry.
