Exploring Varied (Green) Extraction Methods to Optimize Galia Melon Peel Antioxidant Potential
Each year, the world throws away up to 20 million tons of melon peels—but what if that 'waste' is actually a treasure chest of antioxidants?
Melons are more than a sweet summer treat. With global production hitting 40 million tons annually, their peels—8 to 20 million tons of it—are often discarded. Yet these scraps are packed with polyphenols, natural compounds linked to lower risks of cancer, heart disease, diabetes, and neurodegenerative disorders.
In this study, researchers systematically compared three extraction methods: simple stirring, ultrasound, and pulsed electric fields. They varied time, temperature, and solvent strength to find the best recipe for pulling antioxidants out of Galia melon peels.
The winner? Old-fashioned stirring, using a 50% ethanol solution, at 80°C for 150 minutes. Under these conditions, they achieved 3.75 mg of gallic acid equivalents per gram of dry peel—and strong antioxidant activity in both FRAP and DPPH assays (25.77 and 34.44 µmol AAE/g dw, respectively).
Among the identified polyphenols were gallic acid, catechin, and kaempferol—compounds celebrated for their health benefits. This work turns a waste problem into a value-added opportunity, paving the way for greener, more sustainable food processing.
