Green Approaches to Enhance Bioactive Compounds in Goji Berry (Lycium barbarum) Fruits: Comparative Optimization of Pressurized Water, Microwave-Assisted, and Ultrasound-Assisted Extraction Technologies by Using Response Surface Methodology

Goji berries are ancient superfruits, but can we extract their magic without toxic solvents? A new study pits three green water-based techniques against each other to find the most potent and eco-friendly path.

Goji berries have been a staple of Asian medicine for centuries, and now science is catching up to their reputation. Packed with antioxidants, flavonoids, and phenolic acids, these tiny red fruits are a treasure trove for functional foods. But the challenge lies in extracting these bioactive compounds efficiently and safely.

A recent study tackled this head-on by comparing three eco-friendly extraction methods: pressurized water, microwave-assisted, and ultrasound-assisted extraction. All used water as the sole solvent, ensuring food-grade compliance and sustainability. The researchers optimized parameters like temperature, time, and pressure using response surface methodology (RSM).

The results were revealing. Microwave-assisted extraction boasted the highest antioxidant activity (75.942% DPPH inhibition), while pressurized water extraction delivered the most total phenolic content (17.753 mg GAE/g extract). Ultrasound-assisted extraction, however, produced the most anthocyanins (3.607 mg C3G/g) and the best energy-to-bioactivity ratio, making it the most environmentally friendly overall.

This is the first study to combine RSM with bioactivity-energy efficiency assessment for these water-based methods. It offers a clear roadmap for producing bioactive-rich extracts that are both potent and sustainable, meeting the growing demand for clean-label ingredients.
