Green Extraction Methods for Flavonoid Extraction from Pomegranate Peel and its Incorporation to Cheese

Your grandmother's fruit peel might be the next superhero in your fridge—pomegranate peel, packed with flavonoids, is now being transformed into an antimicrobial coating for cheese.

Fruit peels are often discarded, but they hide a treasure trove of antioxidants—polyphenols, flavonoids, and carotenoids. Pomegranate, one of the oldest edible plants, is a standout: its peel is especially rich in flavonoids and antioxidants. These compounds are not just idle passengers; they offer medicinal benefits like anticancer, anti-inflammatory, and antiviral effects, plus neuroprotective and cardioprotective powers.

To unlock these benefits, scientists use various extraction methods—solvent extraction, supercritical fluid extraction, and ultrasound-assisted extraction. Among these, solvent extraction remains the go-to method. In this study, researchers aimed to extract flavonoids from pomegranate peel using suitable techniques, then developed an antimicrobial coating from the peel and applied it to freshly prepared cheddar cheese.

The cheese was made with varying concentrations of pomegranate peel-derived flavonoids. Through microbiological analysis, they tracked common spoilage and pathogenic bacteria to assess antimicrobial activity. The goal: extend shelf life while maintaining physicochemical and sensory quality. This research could turn waste into a functional food guardian, one slice at a time.
