Green Extraction of Date Palm Fruits via Ultrasonic-Assisted Approach: Optimizations and Antioxidant Enrichments

What if the secret to unlocking the full antioxidant power of dates lies in nothing more than water and sound waves? A new study shows that ultrasonic baths can boost the extraction of healthful compounds from date fruits to nearly 90% of what harsh solvents achieve.

Dates are more than a sweet treat—they are a treasure trove of phenolic and flavonoid compounds, natural antioxidants linked to health benefits. But extracting these valuable molecules often relies on harsh solvents like ethanol, which are neither eco-friendly nor sustainable. Enter green chemistry: using plain water as the solvent, with a little help from ultrasound.

Researchers tested four date cultivars—Agwa, Anbarah, Khalas, and Reziz—using traditional water and ethanol extractions, then compared them to ultrasonic-assisted extraction at two frequencies (28 and 40 kHz), three temperatures (30, 45, 60 °C), and three times (20, 40, 60 minutes). They used response surface methodology to optimize the process.

The results were striking: conventional water extraction managed only up to 52% of the phenolic and flavonoid content obtained with ethanol. Adding heat improved it to 60%, but ultrasound was the game-changer—it boosted extraction to nearly 90% of phenolics/flavonoids and 80% of antioxidant activity. Interestingly, the higher 40 kHz frequency extracted more compounds, but the lower 28 kHz yielded better antioxidant capacity. Among cultivars, Agwa and Khalas stood out as the best candidates for ultrasound-assisted extraction.

This method offers an industrial-scale, environmentally friendly approach to produce date extracts rich in antioxidants, potentially transforming how we harness the health benefits of this ancient fruit.
