Cocoa bean shells (CBS) are the unsung heroes of the chocolate industry—abundant by-products with a secret stash of bioactive compounds. In a new study, scientists explored how hydrothermal hydrolysis—basically, cooking the shells in water—under different times and pH levels could boost the extraction of these valuable molecules.
The results were striking: every treatment outperformed untreated shells. The best antioxidant activity (187 µmol TE/g CBS dry weight) and phenolic content (14.5 mg GAE/g) emerged after just 10 minutes at pH 4. Meanwhile, maximum yields of flavonoids, tannins, and methylxanthines were found under mild acidic conditions (pH 4–5), with amounts like 10.1 mg CE/g for flavonoids and 9 mg/g for methylxanthines.
These numbers aren't just good—they're better than those reported for other plant-based substrates. That means CBS, often discarded, could become a valuable source of functional ingredients for food, cosmetics, or pharmaceuticals.
