The humble bay leaf, a kitchen staple, hides a powerful secret: a wealth of polyphenols that science is now eager to harness. These natural compounds, including flavonoids, phenolic acids, tannins, and lignans, are behind many of the leaf's traditional medicinal benefits. But getting them out of the leaf efficiently is the real challenge. This review is the first to systematically compare both conventional and cutting-edge extraction methods, from microwave and ultrasound assistance to enzyme, supercritical-CO2, and mechanochemical approaches. The goal? To find the best ways to maximize yield and quality, making industrial-scale production viable. As market demand for natural ingredients skyrockets, this research paves the way for turning a simple spice into a powerhouse of health applications.
