Microwave-Assisted Extraction of Bioactive Compounds and Chemical Characterisation of Coffee By-Products and Coffee
What if your morning coffee's leftovers could be a goldmine of health-boosting compounds? A new study shows that coffee by-products, not just the beans, are packed with valuable bioactive substances.
Coffee waste is no longer just trash. Researchers have found a clever way to recycle residues from roasting and brewing using microwave-assisted extraction (MAE). This technique pulls out bioactive compounds efficiently, turning what was once discarded into a potential source of high-value ingredients.
Using statistical tools like Principal Component Analysis, the team discovered that the type of sample—green coffee, roasted coffee, silver skin, or spent grounds—greatly affected the levels of phenolic acids and alkaloids (p < 0.001). But that's not all. A linear mixed-effects model revealed that extraction temperature and ethanol concentration also played key roles. The sweet spot was 70% ethanol at 70°C, which yielded the best results.
The samples were rich in caffeine and chlorogenic acid, alongside high fiber (20.7–27.8%) and fat (1.5–12.4%). Fatty acid analysis showed a dominance of oleic, palmitic, and linoleic acids, with their saturated and unsaturated nature confirmed by FTIR spectroscopy. This research highlights the untapped potential of coffee by-products as a source of bioactive compounds, paving the way for sustainable, value-added applications.
