These biodegradable, nonvolatile liquids dissolve bioactive molecules like polyphenols and carotenoids with remarkable efficiency—without the toxic baggage of conventional solvents. Recent advances (2020–2025) have peeled back the layers of their composition and behavior, turning them into versatile tools for extraction and beyond.
