What if the secret to unlocking powerful antioxidants from plant waste was hiding in a bottle of mineral water? A new study shows that natural mineral waters can outperform distilled water in extracting polyphenols from aronia stems.

Aronia melanocarpa is famous for its nutrient-packed berries, but its stems—often discarded as by-products—hold untapped potential. Researchers in Romania explored whether five natural mineral waters, with varying mineral content, could serve as green solvents to extract bioactive compounds from these stems and fruits. Using eco-friendly methods like 24-hour maceration and ultrasonication at room temperature or 50°C, they compared the extraction efficiency against classical solvents.

The results were striking: for stems, maceration was the most effective technique across all water types, followed by ultrasonication at room temperature. In most cases, all mineral waters outperformed distilled water, with the medium-mineralization water achieving the highest extraction efficiency. This suggests that the mineral composition of water can significantly enhance the solubility of polyphenols.

What's more, the phytochemical profiles of stem extracts closely mirrored those of the fruits, highlighting the potential of this agricultural waste as a valuable source of bioactives. By turning to natural mineral waters, we could make extraction processes more sustainable and cost-effective, reducing reliance on synthetic solvents. This study not only valorizes aronia by-products but also opens the door to greener extraction technologies in the food and pharmaceutical industries.
