Rosemary is a treasure chest of medicinal compounds—but how do we unlock it most effectively? A new study pits four extraction techniques against each other, revealing surprising winners for different antioxidant goals.

Rosemary isn't just a kitchen herb—it's a natural pharmacy packed with bioactive compounds. But extracting those compounds efficiently is a puzzle. In a recent study, scientists compared four extraction methods: stirring, pulsed electric fields, and two ultrasound-based approaches (probe and bath). Using a Plackett–Burman design, they optimized each technique individually, then pitted them against each other under ideal conditions.

The results? No single winner—each method shines in its own way. Stirring extraction led the pack in total polyphenol content (about 19 mg per gram of dry weight), while ultrasound bath extraction excelled in antioxidant activity, especially in DPPH tests (about 143 µmol ascorbic acid equivalents per gram). For those chasing vitamin C, ultrasound probe extraction was the champion, recovering about 20 mg per gram of dry weight.
