What if the key to sustainable, high-powered antioxidants was hiding in a leafy vegetable you've never heard of? Pressurized liquid extraction turns yacon leaves into a treasure trove of bioactive compounds.

Yacon leaves, often overlooked, are stepping into the spotlight thanks to green extraction technologies. Researchers used pressurized liquid extraction (PLE) and subcritical water to pull out bioactive compounds from dried, ground leaves. By tweaking solvent mixtures—from pure water to 100% ethanol—and temperatures up to 150°C, they discovered that higher heat and ethanol fractions up to 50% boosted yields and antioxidant power. The extracts were rich in phenolics like caffeic acid and quercetin derivatives, with a strong link between phenolic content and antioxidant activity. Some extracts even showed anti-inflammatory effects and inhibited Lactococcus lactis, a sign of antimicrobial potential. Compared to traditional Soxhlet extraction, PLE works at higher temperatures while keeping solvents liquid under pressure—a smarter, more efficient route to nature's chemistry.
