Forget harsh chemicals and high temperatures. Scientists are turning to a gentler, greener ally: pulsed electric fields (PEF). In a new study, researchers zapped Salvia officinalis L. leaves—common sage—with short electrical pulses to see if this could coax out more of their beneficial phytochemicals.
The team tested two pulse durations (10 and 100 microseconds) over 30 minutes, using a range of eco-friendly solvents: pure ethanol, pure water, and mixtures in between. They then compared the extracts against those made without PEF, measuring total polyphenols, individual polyphenols, volatile compounds, and oxidation resistance.
The results were striking. Using a 25% aqueous ethanol solution with 100-microsecond pulses, the extraction of total polyphenols jumped by up to 73.2%, and rosmarinic acid—a key antioxidant—increased by an astonishing 403.1%. PEF even altered the profile of volatile compounds, giving the extracts a unique chemical fingerprint.
This isn't just about sage. It's proof that smart, green technology can unlock nature's pharmacy more efficiently, potentially transforming how we extract high-value compounds from plants.
