The results are striking: the extraction yield hit about 75%. As the process unfolded, levels of total phenols, antioxidant activity, anthocyanins, pantothenic acid, and choline all climbed significantly. By the end, the extract boasted high concentrations of phenols (2522 mgCATeq/L), antioxidant activity (8227 µmolTEAC/L), and water-soluble vitamins (1397 µg/L).
What drives this antioxidant power? The study found strong correlations with specific phenolic compounds—procyanidin B1, procyanidin B2, kaempferol 3-O-glucoside, and quercetin 3-O-hexoside—suggesting these are key players.
