Pomegranate peels are more than just compost. They are packed with flavonoids—natural compounds known for their antioxidant, anti-inflammatory, and even anticancer properties. But extracting these treasures has often relied on harsh solvents and energy-hungry methods. Not anymore. This study used a greener approach: a choline chloride-urea deep eutectic solvent, paired with microwave heating, to pull out the bioactives efficiently. The process was fine-tuned using Response Surface Methodology (RSM), a statistical tool that finds the best extraction conditions with fewer experiments. The result? A flavonoid-rich extract ready for action. The team then incorporated this extract into freshly made cheddar cheese at different concentrations. Over storage, they monitored the cheese's physicochemical properties, sensory appeal, and shelf life—and crucially, they tracked its antimicrobial activity by counting spoilage and pathogenic bacteria. The findings suggest that pomegranate peel extract could be a natural, dual-purpose ingredient: boosting cheese's defenses while adding value to agricultural waste. It's a win-win for food science and sustainability.
