Spotlight on Secondary Metabolites Produced by an Early-Flowering Apulian Artichoke Ecotype Sanitized from Virus Infection by Meristem-Tip-Culture and Thermotherapy
What if the secret to a healthier Mediterranean diet lies in a virus-free artichoke? A new study reveals how sanitizing this ancient crop changes its chemical defenses—and could boost its health benefits.
Globe artichoke, a Mediterranean staple, is more than a tasty vegetable. It's packed with bioactive compounds like polyphenols, known for their antioxidant and anti-inflammatory powers. But what happens when these plants are sanitized from viral infections? Scientists compared virus-free (sanitized) and infected artichokes, focusing on genes that control polyphenol production.
The results were striking: over 2,400 genes were upregulated and 2,100 downregulated in sanitized plants. Key genes in the phenylpropanoid pathway, like PAL and C4H, were turned down, while others like CHS and CHI were turned up. This genetic shift altered the polyphenol profile, with chlorogenic acid and luteolin-7-O-glucoside taking center stage.
Surprisingly, infected leaves—especially older ones—had higher total polyphenols than sanitized ones, likely a stress response to the virus. But when tested on liver cells, extracts from both sanitized and infected plants reduced harmful reactive oxygen species by 40–48%. To make extraction greener, the team used supercritical CO2, reducing solvent residues.
This research not only deepens our understanding of artichoke biology but also paves the way for sustainable, health-boosting extracts.
