Every year, mountains of defective apples and pomace go to waste, largely because we lack scalable ways to extract their hidden treasures. But those discarded fruits are packed with phlorizin, a compound almost exclusive to apple trees, which shows promise against cardiovascular and metabolic diseases, and even certain cancers. Now, researchers have cracked the code using hydrodynamic cavitation—a process that harnesses the power of collapsing bubbles in water to break down plant material. The team tested a pilot-scale method that uses water as the only solvent, making it both green and efficient. They found that temperatures above 80°C are needed to deactivate the enzyme that would otherwise spoil the extraction. A precise cavitation number around 0.07 proved optimal, and in less than 20 minutes, they recovered nearly all macro- and micro-nutrients, even with up to 50% fresh biomass in the water. The energy cost? Less than 1 kWh to produce 30–100 grams of dry extract containing 100 mg of phlorizin, with cavitation contributing less than 2.5% of that energy. This isn't just about waste—it's about turning a problem into a sustainable source of health-boosting compounds.
