Sustainable Preservation of Plant-Based Meat Analogues Using Distinct Conifer Needle Aqueous Extracts
Could pine needles be the next big thing in keeping plant-based burgers fresh? A new study says yes—and it might just save your veggie patty from spoiling.
The quest for clean-label foods has led scientists to an unexpected source: conifer needles. In a recent exploratory study, researchers tested two spruce needle extracts as natural preservatives for plant-based meat analogues. Using UPLC-MS, they identified a rich mix of phenolic acids, flavonoids, and glycosides in both extracts. One extract, NWE-1 from Picea pungens, proved particularly potent against microbes, keeping total microbial counts at 4.94 log CFU/g—well below the spoilage threshold of 6.0–7.0 log CFU/g—for up to 16 days of storage. The other extract, NWE-2 from Picea abies, had a broader range of compounds but was less effective at preserving. Sensory tests showed that the plant-based meat matrix could tolerate up to 3% NWE-1 or 5% NWE-2 before flavor suffered. By turning underused conifer needles into a resource, this work highlights a circular approach to food preservation, where forest side-streams become valuable ingredients in a sustainable bioeconomy.
