What happens to the mountains of delicate floral waste left behind after harvesting the world's most expensive spice? They might just be a goldmine of antioxidants waiting to be unlocked.

When saffron is harvested, tepals form the most abundant biological residue. Far from being useless, these petals are packed with polyphenols and boast remarkable antioxidant properties. Researchers set out to explore how drying these perishable floral by-products affects their phytochemical makeup and how best to extract their hidden treasures.

Comparing traditional maceration with ultrasound-assisted extraction across various solvent concentrations, the findings reveal a clever shortcut. While dried tepals showed lower total phenolics and anthocyanins than the spice itself, they displayed surprisingly robust antioxidant activity. Even better, drying unveiled hidden phenolic compounds and preserved vitamin C.

Crucially, using ultrasound-assisted extraction with safer solvents like water or low methanol concentrations matched the performance of traditional methods while slashing extraction time in half. Saffron tepals prove that smart dehydration and green extraction can turn agricultural waste into valuable, sustainable resources for the pharmaceutical, cosmetic, and food industries.
