Ultrasound as a promising tool for the green extraction of specialized metabolites from some culinary spices
What if your kitchen spices could be coaxed into releasing their hidden powers with nothing but sound waves? A new study shows that ultrasound dramatically boosts the healthful compounds in garlic, ginger, and turmeric extracts.
Spices are more than just flavor—they're tiny chemical factories packed with antioxidants and antimicrobials. But getting those compounds out usually involves harsh solvents and heat. This study tested a greener approach: ultrasound-assisted extraction using water, on three culinary staples: garlic, ginger, and turmeric.
The results were striking. Ultrasound not only boosted the yellow color in turmeric and ginger (thanks to curcuminoids), but it also increased the levels of total soluble solids, phenolics, carotenoids, and vitamin C. Temperature mattered too—at 70°C, ultrasound worked wonders on heat-sensitive compounds. For instance, turmeric extracts treated with ultrasound at 70°C had up to 67% more vitamin C and 69.4% more carotenoids than conventional extracts at the same temperature. Ginger showed up to 40% higher total phenols.
However, the extracts weren't powerful enough to fully stop pathogenic bacteria like Salmonella, L. monocytogenes, or S. aureus. Only garlic slowed down L. monocytogenes growth. Still, the ultrasound-treated extracts were packed with more bioactive compounds and antioxidant capacity, hinting at real nutritional and phytotherapeutic potential—all thanks to sound waves.
