What if the humble cocoa bean shell—usually tossed aside—could become a treasure trove of health-boosting compounds? New research shows it can, with a little enzyme and ultrasound magic.

Cocoa bean shells: the overlooked byproduct of chocolate production. But this study reveals they're far from waste. By combining enzymes—pectinase, xylanase, and cellulase—with ultrasound, researchers unlocked a potent cocktail of bioactive compounds from the shells. The winning recipe? A 1.0% enzyme concentration and 80% ultrasound amplitude, yielding impressive amounts of phenolics, flavonoids, and procyanidins. Antioxidant power soared, too, as measured by DPPH and FRAP assays. But the magic didn't stop there. The team dried the extracts into powders using two methods. Freeze-drying won the preservation battle, keeping more bioactive compounds intact than spray-drying. Even better, the freeze-dried powder stayed stable for 12 weeks at room temperature, though moisture and bioactivity slowly declined over time. A standout find: glycitin, an isoflavone, emerged as the dominant compound in freeze-dried powder. This shell-to-powder journey could turn food industry waste into functional ingredients—a sweet upgrade for both health and sustainability.
