Valorization of sage extracts (Salvia officinalis L.) obtained by high voltage electrical discharges: Process control and antioxidant properties

Dalmatian sage, a Mediterranean herb cherished for centuries, holds a secret: powerful antioxidants that fight bacteria, inflammation, and even cancer. But traditional extraction methods often fall short. Enter high voltage electrical discharges (HVED)—a 'green' technology that uses electric sparks to punch holes in plant cells, releasing their precious compounds.

In this study, scientists optimized HVED by testing different treatment times, ethanol concentrations, and voltages under argon or nitrogen gas. The winning formula—nitrogen, 9 minutes, 25 kV, and 33% ethanol—yielded an impressive 57.21 mg of phenolic compounds per gram of sage. This surpassed conventional methods, proving HVED's electroporation effect boosts antioxidant activity.

Safety was also confirmed: the sage contained no harmful pesticide residues or heavy metals, making it ideal for functional foods. With its GRAS status and now a superior extraction technique, sage is poised to become a star ingredient in sustainable, health-boosting products.
