Valorizing date seeds in biscuits: A novel approach to incorporate bioactive components extracted from date seeds using microwave-assisted extraction

What if the seeds you throw away could make your biscuits healthier and more sustainable? Date seeds, often discarded, hide a treasure trove of bioactive compounds—and scientists just found a fast, green way to unlock them.

Date seeds—the overlooked byproduct of one of the world's most beloved fruits—are packed with nutrients and bioactive compounds. In a new study, researchers optimized a microwave-assisted extraction (MAE) method to pull these valuable components from defatted date seed powder (DSP) of three varieties: Khalas, Fardh, and Khenaizi. Under optimal conditions (700 W, 6 minutes, 45°C, and particles under 125 μm), they achieved impressive yields: total phenolic content of 15.88 mg GAE/g DSP and total flavonoid content of 8.51 mg QE/g DSP. The extracts also showed strong antioxidant activity, with values of 17.93, 61.68, and 39.74 mmol TE/g DSP for ABTS, DPPH, and FRAP assays, respectively. Notably, the bioactive properties varied significantly among the three varieties, highlighting the importance of cultivar selection. The main phenolic compounds identified included benzoic acid, catechin, ferulic acid, caffeic acid, and vanillin. The microwave treatment also altered the moisture content, water holding capacity, and color of the DSP. When both the extracts and the remaining residues were incorporated into biscuits, the fortified biscuits showed enhanced phenolic, flavonoid, and antioxidant profiles. This research demonstrates a sustainable path to valorize date seed waste, turning a disposal problem into a functional food opportunity.
