Winter savory (Satureja montana) has long been a kitchen staple and a folk remedy. Now, scientists are uncovering just how much its biological punch depends on the extraction method. In a recent study, two subspecies—montana and variegata—were put through seven different extraction techniques, from steam distillation to ultrasound and microwave-assisted methods.
The results were striking. Essential oils and subcritical water extracts showed the highest antimicrobial activity against a panel of bacteria and fungi, including E. coli and Candida albicans. Meanwhile, ultrasound- and microwave-assisted extracts showed no such effect. The essential oil also boasted the highest total phenolic content, followed by subcritical water extracts, while hydrolates lagged behind.
The team used a battery of tests—disk diffusion, minimal inhibitory concentration, time-kill kinetics, and pharmacodynamic modeling—to confirm the effects. These green extraction methods, particularly subcritical water, offer an eco-friendly and cost-effective path forward. The findings hint at future in vivo applications, where these natural antimicrobials could replace synthetic alternatives.
